"El paste", a delicious puff pastry filled with potatoes and meat has its origins in England and was at first introduced to the inhabitants of Pachuca and Real del Monte, in Hidalgo. Nowadays this snack is an important part of the Mexican gastronomy.

The name of this tasty pie, "el paste", probably derives from the English pastry or paste. It is a type of pie which was brought to Mexico by the British who arrived in the early 19th century to explore the silver mines of Real del Monte, in the state of Hidalgo. The locals learned the recipe from the British wives and soon after the pie became an essential part of the locals? daily diet.  From there it extended its reputation to other villages, such as Pachuca, Huasca and Tulancingo until it reached the Huasteca of Hidalgo and, finally, Mexico City.

This traditional pie, easily recognizable for its oval shape, is a puff pastry which is stuffed with sliced potatoes and chopped meat, onions and spices like salt and black pepper.

Later on "el paste" became the mother of all the rest of the Mexican varieties, which include pies filled with beans, green chili peppers and red and green sauces. There are also sweet pies, prepared with the same method and idea, but filled with sweet ingredients like apple, pineapple and rice with milk.
